Rolo cookies are one of those cookies that will surprise you with a burst of flavor. They are fun to make for a cookie exchange or for a gathering. Serve with a glass of milk, and you will be in heaven.
How to Make Rolo Cookies
Ingredients
- 1 box of chocolate devil’s food cake mix
- 1/2 c of oil (I use coconut oil)
- 2 eggs
- Rolos, unwrapped
Directions
Preheat oven to 350 degrees. In a medium mixing bowl, combine the cake mix, eggs, and oil. Mix well. Next, take the dough and roll into a ball about the size of a quarter. Take the ball and smoosh it down, so it’s flat like a pancake. Place a rolo in center and then cover up the rolo with the dough. Repeat until all the dough is gone. Bake at 350 degrees for 9-10 minutes.
I prefer to serve these warm with a glass of milk, but they are wonderful at room temperature.
