Aren’t these ham and egg cups adorable? My gang loved them and they were so simple to make.
We are big breakfast for dinner people around here.
We don’t usually have elaborate breakfast choices around here since I am a single mom. I work each morning, so breakfast is something simple like oatmeal.
You can make these ahead of time and just heat them up in the microwave. I actually doubled the recipe, so I would have a hot breakfast for the next 6 days. I just stored the ham and egg cups in an air tight container in the refrigerator.
Ingredients
- 2 T of butter,melted
- 6 slices of ham, deli
- 6 eggs
- Salt and pepper to taste
- Biscuits, toast, or English muffins
Directions
Brush the muffin cups with half of the butter. Line each cup with a piece of deli ham. Brush the ham with the remaining melted butter. Crack one egg into each ham cup and season with salt and pepper, Bake at 400° for 20-25 minutes or until eggs are set. Gently remove egg cups by using a knife or a spoon to avoid breaking the cups. Serve on toast, biscuits, or English Muffins.
