Enchilada Chicken

This is delicious served over tortilla chips!
Ingredients
- 2 cans 14 oz diced tomatoes
- 2 cans enchilada sauce
- 2 packets of taco seasoning
- 2 cans of corn (I use frozen)
- 3lb frozen chicken breast
- fresh cilantro
- shredded cheese
- avocado slices(optional)
Instructions
- Place frozen chicken in crock pot
- Place all other ingredients on top except for cheese, cilantro, and avocado
- Cook on low for 6-7 hours
- Before serving mix in cilantro to taste in crock pot
- Shred chicken
- Serve over tortialla chips or rice
- garnish with cilantro, cheese, sour cream, and avocado slices

Could I reduce cooking time by placing the temperature on high for a few hours, then back to low? I’m rating this recipe 5 stars, because I know it’ll be fabulous! 2 can of enchilada sauce? Does that mean 2 of the big cans (28oz each) because I didn’t see any small cans. I follow directions I am not a cook. lol…

Made this today.. Me and the hubby loved it. The hubby added Velveeta to the pot, he wanted it thicker. This will be on the menu more often..
The Wife and I loved this recipe, I cut ingredients by half because it’s just the two of us. Also added a home grown and smoked chipotle pepper to add a little smoky heat goodness. God Bless.
