Easy Slow Cooker Taco Soup Recipe with a Twist
Easy cheap crockpot meals are my speciality.
I’m always coming up with a new cheap slow cooker meals that are delicious and inexpensive.
My gang has always adored an easy slow cooker taco soup recipe that has been on our dinner menu for years. So last week I decided to put a twist to our original taco soup recipe. I got the idea from one of my favorite queso recipes that uses cream cheese. I will be adding the easy queso recipe soon, so stay tuned.
The whole family enjoyed the easy slow cooker taco soup recipe. I plan on replacing the old easy taco soup recipe with the new one indefinitely. It seriously taste like queso. It’s the bomb.
Taco soup is one of those good crockpot recipes. I don’t believe you can mess it up. It’s one of those dump it all in the slow cooker and walk away. And Voila! Dinner is ready.

Ingredients
2 lbs of sausage – I like to use pork
2 blocks of cream cheese
2 cans of Rotel – I use the mild if my kids are eating with us
Cut up cream cheese into cubes and place in slow cooker
Place cream cheese on top of sausage in the slow cooker and then add the rotel and taco seasoning
Add chicken stock to the slow cooker
Cook on high for 3 hours or low for 6 hours
Serve with optional garnishes
We eat low carb at our house, so we don’t usually add tortilla chips. However, it’s wonderful served with a few your favorite tortilla chips. We cheat once in a while.
Be sure to use mild rotel to make it one of your favorite kid-friendly crock pot meals.
