This hot Reuben dip is absolutely wonderful! In fact, it just might be my new favorite dip.
I made it for New Years Eve and finished it off for breakfast the next day.
Shhh, don’t tell anyone. It was before my low carb food plan and exercise fitness program were in existence.

How to Make the BEST Hot Reuben Dip Recipe
Ingredients
- 1/2 lb of corned beef, diced (I used lunch meat and had it sliced thick)
- 8 oz of cream cheese, softened
- 1 c of Swiss shredded cheese
- 1 cup of sauerkraut, drained
- 1/2 c of sour cream
- 1 T of ketchup
- 2 T of brown mustard
- Crackers or rye bread
Grease a 1 quart baking dish and preheat oven to 350 degrees. In a mixing bowl, mix all the ingredients together until smooth. Spoon into greased baking dish. Bake at 350 degrees for 30 minutes. Serve warm with bread or crackers.
This makes a lot. It will serve at least 12 people.

Specifically, what kind of cheese did you use? Swiss is my choice for this but it looks like a yellow cheese.
I used Swiss. Thank you for bringing that to my attentions.

I made this and while delicious, I would’ve like to have it be a bit more creamy and less “casserole” like in texture. What would you suggest? Thanks!
