Last week we were at Family Camp, so it’s back to reality! I am really trying to cook healthy whole foods. I am waiting anxiously for my Azure order this week.
I bought a new cookbook at Family Camp called, From the Kitchen of Two Sisters . I am going to implement a couple of new recipes this week.
Also, I am going to start exercising faithfully with some girls at church.
Monday ~ Spaghetti, sauteed zucchini, and garlic bread ~ left over from camp
Tuesday ~ Smashing Pumpkin Soup, spinach salad, and whole wheat rolls
Wednesday ~ Quick Pan – Seared Chicken with salsa, refried beans, salad
Thursday ~ Red Beans and Rice ~ Homeschool Pot Luck (left over from camp)
Friday ~ Maple Turkey Burgers, sweet potatoes, green beans
I always cook with coconut or olive oil when it a recipe calls for an oil.

Do you find that cooking for 8 is easier than cooking for 5 used to be? I don’t know why, but my “bulk” dishes always come out tasting better than the ones I make for just a few of us. Happy MPM!
