This so easy slow cooker apricot chicken is extremely flavorful and will make a family favorite. In all honesty, it taste very similar to BBQ chicken, but just a tad sweeter.
I love using my slow cooker as much as possible. I usually pop in our dinner right before noon and it’s ready to go when I finish up my afternoon workload and our homeschool day.
It makes my life so much easier, not to mention, cooler in the summer months. I try to avoid putting the oven on at all costs during the hotter seasons in East Texas.
How to Make Slow Cooker Apricot Chicken
Ingredients
- 2 lbs of chicken breast
- 8 oz bottle of Russian Salad Dressing
- 12 oz jar of apricot preserves
Directions
Mix together preserves and salad dressing together, set aside. Place chicken on slow cooker and pour mixture on top of chicken. Cook on high for 1 hour and then low for 4 hours.
I like to shred the chicken and serve it on rice. Feel free to serve over mashed potatoes with the apricot sauce on top. Or just simply with your favorite veggie or salad.
It’s wonderful either way.

This freezes well too. I just put the leftovers in a baggie and label it.
