This super easy Mexican casserole makes a hearty meal for our family. I love to take it to our pot luck at our church or homeschool fellowships.

Easy Mexican Casserole Recipe
Ingredients
- 1 lb of ground beef
- 1 taco seasoning package
- 2 cups of frozen corn, thawed
- 2 cans of refried beans
- 1 cup of salsa
- 6-8 flour tortillas
- 1 1/2 c of shredded cheddar cheese
Garnishes(optional)
- black olives
- cilantro
- tomatoes
- sour cream
Directions
Brown ground beef with taco seasoning according to seasoning package directions. In medium bowl, mix beans and salsa together. Spray 9X13 baking pan with cooking spray. Tear 3 flour tortillas into quarters and place them in the bottom of sprayed pan. Pour 1/2 of meat, 1/2 of corn, and 1/2 of bean/salsa mixture. Repeat layers. Place shredded cheese on top of casserole. Bake at 350 degrees for 45-50 minutes or until done. Serve with optional garnishes and tortilla chips.
It serves 8-10.
