It’s a rare moment around here when all 5 of my boys absolutely love something I make them. Thanks to my dear friend, Shannon, who submitted this so easy bran muffin recipe in our new church cookbook recently. I made them yesterday for the kiddos and they were a huge hit! I renamed them……
Easy Bran Muffins that even my kiddos love
Preheat oven to 400 degrees
2c bran flakes ( I used the Walmart brand)
1 c of milk
1/4 c of oil
Mix and let stand for 10 min. Meanwhile, in a small bowl, mix:
1c of flour
1/3c of sugar
1T baking powder
Add to bran mixture until moist. Spoon into sprayed muffin pan. Bake for 10min.
Double the batch and freeze for later.
My boys each had 2 muffins with a piece of fruit. Talk about a cheap, healthy, and easy breakfast. These are yummy, too. Enjoy!
