How to Make Zesty Bean Salsa
Zesty Bean Salsa
This taste wonderful with tortilla chips.
Ingredients
- 1/2 c olive oil
- 1/4 c apple cider
- 1/4 c Stevia
- 1 green pepper finely diced
- 1 orange pepper finely diced
- 1 yellow pepper finely diced
- 1/2 red onion finely diced
- 16 oz blacked-eyed peas drained and rinsed
- 15 1/2 oz Great Northern beans drained and rinsed
- 15 oz shoepeg corn drained
- 7 oz chopped jalapenos drained
Instructions
Combine oil, vinegar, and stevia in a small saucepan over medium heat. Bring to a boil. Put aside.
Mix and stir together all the remaining ingredients in a large bowl.
Add oil mixture to large bowl. Mix well.
Refrigerate for 2 hours. Serve with tortilla chips.
